The best, finest chocolate in the world is made out of the Criollo bean.

There are 4 types of cacao beans in the world from the following trees: Forastero, Criollo, Trinitario and Arriba (or Nacional), which grow in tropical regions within 20ºC North/South latitudes of the Equator at 21-25ºC and 65-75% humidity. The Forastero, the lowest grade bean, is the least in aroma and quality, representing about 85% of the world's production. The Criollo bean is the best in grade, aroma and quality, but represents only 1% of the world's production. The Trinitario, a hydrid from the Forastero and Criollo trees, represents 14% of the world's production and is a mid grade bean, providing higher aroma and quality than the Forastero bean. The Madagaskar Trinitario is classified as a fine grade bean. The Arriba bean, which almost vanished, is a special breed from the Forastero tree, providing higher aroma and quality than the Forastero bean, but its grade level is not considered higher than the Trinitario bean.
